FREEZE-DRIED FOOD SOLUTIONS FOR THE UAE MARKET

Rieckermann’s customer-driven innovation supports ready-meal demand and food security

Global demand for ready-to-eat (RTE) foods rose sharply following the Covid-19 pandemic, driven by consumers seeking nutritious, long-life, and space-efficient meal solutions. As freeze-dried foods gained traction as a high-quality, shelf-stable option, one UAE-based producer launched a greenfield project to enter the ready-meals market, supported by Rieckermann’s end-to-end project expertise.

A Highly Specialized Production Segment

Freeze-drying requires precise process control, robust equipment, and significant upfront investment. Some of the key challenges for this customer included validating product concepts, defining scalable production capacity, and selecting the right technologies while minimizing risk.

The production line also needed to be integrated into an existing warehouse, requiring careful layout and utilities planning to ensure operational reliability and future scalability.

Integrated Concept Development and Engineering

Through early Rieckermann-led feasibility assessments and data-driven product trials, the customer validated product quality, defined scalable capacity, and made informed technology and investment decisions. This enabled entry into the freeze-dried ready-meals segment with reduced risk and greater investment confidence.

The customer also benefited from clear technical and commercial transparency at every stage. Rieckermann’s integrated roadmap—covering product development, process design, and equipment selection—helped streamline project complexity and shorten development timelines.

Adapting the production concept to the existing warehouse infrastructure further minimized capital expenditure while ensuring operational efficiency and long-term scalability. This created a strong operational foundation, enabling faster market entry and more strategic investment.

From Concept to Market Readiness

With a comprehensive concept package in place, the customer approved the investment and moved into execution. Mechanical and electrical installations are complete, with the commissioning scheduled to begin this year.

An already operational pilot freeze dryer has supported recipe optimization, SKU development, and go-to-market preparation. Early product samples have also been showcased at regional exhibitions in the UAE and Saudi Arabia, generating initial market interest.

Supporting the Future of Freeze-Dried Foods

By combining engineering expertise with a collaborative, end-to-end approach, Rieckermann supports their customers in developing new product categories, strengthening food security, and building future-ready production capabilities across the Middle East and beyond. This project positions the customer as an early mover in the region’s growing freeze-dried food market and reflects continued progress toward resilient, technology-driven food manufacturing.
